Sweet Potato Breakfast Hash

If you're not a fan of pumpkin-spice-everything but still want a taste of fall, look no further than this hearty Sweet Potato hash. Now's the time to take advantage of that in-season produce and whip up the perfect sweet and salty skillet that's perfect for any time of day! Plus, this dish comes together in one pan with minimal prep work, which means less cleaning and more eating.

Some may call this the perfect meal to fuel up for the day, others might say it’s a hearty reward after a long day of hiking. With plenty of protein, fiber and carbs, the sweetness and spice in every bite makes this a fun twist on a typical hash that’s sure to satisfy any camper. Even if you’re not at camp, feel free to whip this up at home– we won't judge.

Ingredients

Serves 4, with a 12 in. skillet

  • 1 Sweet potato (peeled if desired)
  • 3 Sausages (removed from their casing)
  • 1 Grannysmith apple
  • 1 Yellow onion
  • 1 tsp of Thyme
  • 1/4 tsp of Cinnamon
  • 1/2 tsp of Rosemary
  • Salt to Taste
  • 4 Eggs
  • 1 tbsp of butter (optional)

Prep Time: 5 minutes

Cook Time: 20-25 minutes

Directions

  1. Chop the sweet potato into bite-size pieces, then cut the apple and onion into matchsticks. 
  2. Heat the skillet over medium heat. Add the sweet potato, onion and apple to the skillet and sauté until softened, about 15 minutes.
  3. While everything cooks, season with salt, thyme, cinnamon and rosemary. This is when your fellow campers will start asking "What smells so good?"
  4. Remove the sausages from their casing and add them to the skillet. Use your spatula to break up the ground meat to ensure even cooking. Cook for five to ten minutes, or until the sausage is cooked through.
  5. It's time to get cracking with those eggs. Make four wells within the sweet potato mix and crack an egg into each one. If the skillet looks dry, add a little butter to help prevent them from sticking.
  6. Once the eggs are cooked to your liking, remove the skillet from the heat and dig in!
