Thinking about fueling up for that long hike with three of your buddies? How about trying our breakfast tacos? They’re a perfect way to kick off your day. Packed with scrambled eggs, veggies, and hash browns, these tacos will give you the extra energy you need for your outdoor adventure.

  • Coghlan's Multi-Spice

Ingredients

Breakfast Tacos

Makes 4 Tacos

  • 4 corn tortillas
  • 4 eggs
  • 1 red pepper, sliced
  • Salt and pepper to taste
  • 2 cups frozen hash browns
  • 1 cup grated cheddar cheese
  • Hot sauce to

Prep Time: 5 minutes

Cook Time: 10-15 minutes

Directions

  1. Whisk together eggs in a bowl. Add salt and pepper to taste and set aside.
  2. Heat the Coghlan's Cast Iron Camp Griddle over medium heat on a camp stove.
  3. Once the griddle is pre-heated, grease with butter, and add your hash browns to cook. Push them to one side and add your scrambled eggs to one side.
  4. Add peppers and jalapeno to the griddle and cook until tender.
  5. Toast the tortillas on the Coghlan's Camp Stove Toaster on both sides.
  6. Once the tortillas are toasted, build your breakfast tacos with crispy hash browns, scrambled eggs, and veggies. Top with cheddar cheese and a splash of hot sauce.
