Equipment Required:

  • Tin Foil
  • Knife
  • Cutting Board
  • Heat-Resistant Gloves
  • Metal Tongs

Ingredients

Serves: 2 People (Doubles Easily!)

  • 1 cup of frozen home fries
  • 4 large eggs
  • 1 diced tomato
  • Shredded cheddar cheese

Optional:

  • Bacon
  • Diced onion
  • Hot sauce
  • Ketchup

Prep Time: 5 minutes

Cook Time: 10 minutes

Directions

  1. Grab a piece of large piece of tin foil. Fold it in half, then shape into a dish with 1 - 1.5 inch edges. Repeat as needed.
  2. Add approximately ½ cup of the home fries into each dish. Create two wells in the home fries, then crack one egg into each.
  3. Add in any extra veggies and proteins you’ve brought along. Make sure to spread them out evenly for a little bit of everything in each bite.
  4. Top off your breakfast creation with some shredded cheese. We opted for cheddar, but mozzarella, gouda, or jack would make yummy alternatives.
  5. Grab a second sheet of tin foil and fold it over top of your packet to create a lid of sorts. It doesn’t have to be perfect; all we want is to trap the heat from the fire and make sure the breakfast packet cooks somewhat evenly.
  6. Carefully place your foil packet in the fire, ideally near some coals and embers. Cook for 8-10 minutes in the fire and be sure to rotate the packet for an even cook. If your fire-pit has a built-in grate, the packet can cook on top of this as well. Keep in mind, that since it will be further from direct heat, you’ll need to let it to cook over the flames for longer, aim for 10-15 minutes.
  7. Carefully remove the foil packet from the fire using metal tongs and heat resistant gloves. Allow to cool briefly before removing the foil “lid”.
  8. Top off your piping hot breakfast with some hot sauce, ketchup or more shredded cheese (we won’t judge).

TIP: The best fire to cook over is one that has been burning for a long time. You don’t want to cook over roaring flames. Coals and embers = hot, even cooking
